Today I brought the leftover Spicy Chicken Parmesan for lunch. I also threw in a small container of frozen corn and some carrots. Heck...it's like I am eating like a normal person!
Once upon a time, I was promised McDonald's if I finished my homework quickly. So I hopped to it and got to eat nasty, yet delicious food. Then I sweetly asked my dear husband to take me to DQ for a Blizzard after and he obliged! :) So I stuffed myself further with a Butterfinger Blizzard and I was so happy! :) The End.

I brought the leftover tortilla soup to work for lunch today and it was great! I added the little bit of leftover rice to it and brought the baked tortillas (like chips) and had people jealous of my lunch! Yum!
When I got home from class, Chuck had made another Let's Dish meal - Spicy Chicken Parmesan. It was fantastic. We also got the whole grain pasta to go with it. It was really good. I now regret not getting them for all of the meals that had pasta. The only downfall is that they take a little longer to cook than regular pasta. But now that we know that, we can account for that in the cooking. It did taste a little different, but I was happy to be eating whole grain pasta and not want to spit it out! So yay!

When I got home from class, Chuck had made a Mexican smorgasbord. It was delicious! We had Chipotle Chicken Enchiladas from Let's Dish. Then he made some Mexican rice and tortilla soup! It was fantastic and hit the spot tonight.

I have really fallen off the "log what I eat" wagon. I have been horrible about using LoseIt and basically haven't cared much what I ate. Oh well. Some times it happens. I know I have to (want to?) get back on track. It's good for me. I am quickly approaching the end of my 20s. And it's only going to get harder from here on out. So Back I go. Less snacks! I love snacks. And snacking. And always having something to munch on when I need it (want it?). But that is not helping me maintain a weight for very long.
I went running last weekend around the neighborhood and needless to say, it kicked my ass. I can run on treadmills and around the track at the gym. But put me outside and I turn into a hopeless mess. I think I expected to do better after doing so well on the track. I am sure part of it is that when I am at the gym, I run with Chuck. I ran by myself and I think it's harder alone. Having someone there is a good motivator. (And a good insurance policy if you collapse into a pile of mush!)
I am hoping I can do this more often. I might get up tomorrow morning (weather permitting) and give it another go and see if I do better/worse/about the same. I'll only get better at it if I go more often. I should really go in the mornings before work. I leave late enough where I could make it work. Plus, runners always have cute, toned little bodies. I need a little more toning and a little less flopping. That would be nice! :)
Today I brought a lunch. Which is a good thing considering I ate out for lunch twice this week. I brought some leftover pasta we made the other day, some frozen corn, carrots, 3 cuties oranges and pickles. I'm not that concerned about the number of calories I have today. I just want to eat smaller amounts and more fruits and veggies.
I've also had a hard time enjoying water recently. I have gone back to drinking Crystal Light because at least I am drinking liquid. But I really need to get back on track with my water intake as well.

After eating crappy yesterday, I am going to have my low-cal soup that I LOVE. I did have a 100 calorie pack of pretzel goldfish. They were good at the time, but I wish I hadn't had them. Oh well. I also wish I had remembered to grab a 100 cal pack of popcorn when I left the house today. Oh well! :)

St. Patty's Day. I ate fruits and veggies like a good little girl today. For lunch, I had a little more leftover pasta from Monday and I wanted to eat the chicken from tacos last night. So I did. Together. And they were delicious. There was enough leftover sauce on the chicken to lightly coat the pasta. I might have to use taco seasoning as a pasta sauce!
When I got home, neither of us felt like cooking, so we decided to go to McDonald's. I know. Bad Andi. But it was SO good! And since we were already eating like crap, why not top it off with a Blizzard from DQ? Don't mind if I do!
What a wonderfully bad for you evening! :)

I packaged up our lunches this morning and was very proud I did it two days in a row! I am really looking forward to doing this. If I can make it enjoyable, I am more likely to do it more often.
I didn't eat all my veggies, but that's ok. Mostly because veggies are gross! :) (And because I forgot.)

Along with the lunches I prepared last night, I brought some grapes and a couple cuties...for breakfast and snacking. I sent Chuck with a banana, too. He usually has a granola bar for lunch.
I am hoping this reminds Chuck to eat during the day. He has a habit of getting busy and skipping lunch. I don't have that problem. My days revolve around when I get to eat next!
The lunch was really good. I didn't eat all of the veggies (and even left some rice uneaten...since it's the least healthiest thing I brought) because I was full. I have them to snack on, though and that is nice.
Hopefully I can keep this up. It's only been one day, but it wasn't that hard. I just need to set some time aside at night to prepare the meals or make time in the morning.
Chuck made spaghetti for dinner and the most wonderful, melt-in-your-mouth meatballs to go with it.
After dinner we went on a short walk around the neighborhood and chatted with a couple of the neighbors. I miss the bustle of the neighborhood in the spring and summer!
I also packaged up our leftovers for work tomorrow. I decided to use regular tupperware I had instead of the new containers since spaghetti sauce always stains them. I didn't want the new stuff stained. It made more sense to use stuff that is already tinted red! :)

While Chuck and I were out yesterday running errands, we picked up a bunch of fruit and veggies for lunches. I am really going to try to bring my lunch more often. This will mean getting over some of my fears of leftovers, but I think it will be worth it in the long run.
I did some cleaning in the morning (after eating a cutie mandarin orange) and completely forgot about lunch. It's a good thing Chuck remembered. We threw in some frozen pizza. It was wonderful!
For dinner, we had a teriyaki pork tenderloin. It was fabulous. We also had some cheesy potatoes we had in the freezer. YUM.
I made sure we had some leftovers for lunch and I went to work on using the "bento" boxes that I got at The Container Store. They aren't really bento boxes, but I am using them for that purpose. I got one for Chuck and one for myself. Mine is slightly smaller. Because I will pretty much eat whatever I bring.
Since we had potatoes for dinner, I whipped up some minute brown rice and added it to the containers with some pork on top. These have a little divider in them, so I put some frozen corn on the side and added a little butter for flavor and stuck them in the fridge for Monday.
I also prepared some containers with veggies in them (mine had carrots and celery, Chuck's had just carrots). This way everything is ready to go for the morning.
