polynesian chicken with island rice

This meal is from Let's Dish. I am starting to think that maybe I am becoming quite the spokesperson for them with all the meals I post. 🙂

This meal was really simple to make. First you get the rice cooking. I think the bag of rice had butter, lime zest and onion in it.

While the rice is cooking, add the chicken to the grill. I used a grill pan.

While the chicken is cooking, I heated up the sauce a little bit. It WAS frozen and I didn't want to put cold sauce over my hot chicken.

Then I made a little frozen corn and served it up!

It was a really tasty meal. I was pleasantly surprised. I get a little worried when there are crazy sauces added to chicken. But we even had enough for one of us to take some leftovers to lunch. So I am glad I have a few of these meals left!
