It's time to make a diet change. I love pasta. I love carbs. There's no way around that. I like fruits, but vegetables are gross. But if I keep eating pasta all the time, I am going to end up diabetic and I will probably die of starvation.
So it's time to take some precautionary measures. Since I turn 29 in just a few weeks, my goal is to not be so addicted to carbs by the time I turn 30. I know this seems like a long time, but I also know that if this is going to stick, I need to take baby steps.
So I have done some reading on things you can do to eat low-carb (because lets be realistic, I am not cutting carbs out completely). I also came across some cookbooks I have added to my Wish List. They are by The Sneaky Chef. She has two books that are ways to put vegetables into kids foods without them knowing. I eat like a kid. This should work for me.
She has a third book for cooking for your picky husband. Apparently women aren't picky eaters. Or maybe they hide it behind their “picky” kids and husbands. But I thought this might have more adult meals. (Since my hubby needs to eat, too. He doesn't eat like a kid like I do!)
If you have any good recipes for low-carb meals or ways to sneak in more vegetables, I would love your recipes! If you know of some other cookbooks I should add to my wish list, those suggestions are welcomed, too!
Last night I made Island Chicken.
This recipe is from Sandra Lee. I just love her and her food. I found the recipe online, but mine came from her “Cooking Made Light” cookbook.
I don't like hot pineapple, so I kept some uncooked for myself to eat. And I only had chicken tenders on hand, so I used those. And I made wild rice to go with it. It was so delicious! I also add a little more seasoning than the recipe says. I just sprinkle the seasoning on instead of measuring it out. (I do measure it out for the sauce.) I make mine on my grill pan. I definitely need to keep this in mind as a quick go to meal! Give it a try….you won't be disappointed!

We got our first snow fall last night! I am so excited to have snow! Look at how cute the yard is!
Our grass and driveway have a nice coating of ice on them along with the snow from the sprinklers running last night. Whoops, sprinklers…whoops.
So on this day when you want to curl up next to the fire place and look at it from inside…guess what we are doing?
Planting trees! Obviously! Doesn't everyone plant trees after the first snowfall?
We bought a couple this morning and we are off to plant them! I'm so happy to have some trees at the house. It makes it feel more lived in and more like home! Hope you are staying warm and doing less strenuous activities than we are! 🙂

We got trees planted on the boulevard. (I mentioned this last week.) The ones they gave us are HUGE. They are really nice looking trees. I am so excited!

The best part is that Chuck sent me these pictures while I was still at work. It was such a fun surprise email from him!
Now we need to hurry up and plant one more this fall in the back! I think we are leaning toward a Crimson King Maple. We love the way they look. There aren't many of them around either. And they have such a gorgeous deep purple color.
I was in the mood for tuna yesterday and saw this at the store on sale. It was actually pretty good. I think I might get a couple more meals from Smart Ones to try.
