Busy Busy Busy

It's been quite a while since I have posted on here, so I'll try to catch up a bit.

Christmas was great and really busy. It was great to see everyone, but we're always a little worn out after the holidays. HERE is the link to all the Christmas events if you are interested. Note that Chuck and I got a fake tree this year. And we may have gotten on a little bigger than we needed….it's 9 feet tall and pre-lit with 1200 lights. That's right, 1200! I think we could communicate with Mars with that thing. It's beautiful, just maybe a little bigger than we needed. It was deceptively small in side the store!

We went to Ben & Trisha Fisher's house for New Year's. I also surprised Chuck with a huge cake for his birthday. There are pictures HERE of Chuck's cake and from hanging out with our friends. I was surprised by the turnout they had on New Year's considering the horrible weather we got that day. But I am glad so many people made it. It was a good time!

The following weekend we went to Lutsen and stayed at Bluefin Bay with our friends Kelly & Andy. We had a great time. Lots of skiing, lots of eating, and lots of fun just hanging out. We got to do a little ice skating as well. I just got some hockey gloves…in pink! I am excited to do more skating and try them out some more. 🙂 Pictures from this weekend are HERE if you want to take a look. I do have some videos of skiing, but I haven't uploaded them yet. I will try to get them on here.

Now in a couple weeks, we are headed to the Caribbean for another cruise. I am very excited! Stay tuned for pictures from that! Hope everyone had a great holiday!

Chocolate-Carmel Swirled Chip Cookies Dipped in White Chocolate

Yes, this is a very long name, but they are really good. I am part of a cookie exchange next weekend and I had some people over this weekend to bake. These were the cookies I made. I used the recipe on the back of the package of chocolate-caramel swirled chips and then dipped part in white chocolate to add a little something extra to them. They turned out quite well.

I also have pictures from the Cookie Making we did this weekend. My friend, Kellyn came along with my mom, aunt, youngest brother and cousin. Charlie spent most of the time playing video games….and testing cookies. So I think he had a good time. My mom made my Peppermint Bark. My aunt made some Peanut Butter cookies with Kisses pushed in them. Kellyn made tons of dipped pretzels, and some other things I haven't heard of before…and we made some candy cane shaped cookies. I think we need a little more practice on those. 🙂

It was a good time. I might actually do it again sometime! 🙂

Chicken Taco Grande

I made this the other day and it was really good. It was similar to the Chicken Ring I made from Pampered Chef. This was really easy to make and I will probably make it again. I did the same thing I did with the other recipe which is make the filling as it calls for, but only use 1 package of crescent rolls. It is much fuller, but makes for a better meal for Chuck and me. I have included the recipe from Pillsbury where I found this recipe. Enjoy!

– Fit Bit. Chuck has one of these and I think it's so cool! It's too hard to use his, so I really just need my own! 🙂
– These towels from Williams Sonoma in green or red. I love these towels!
– Maybe some new pot holders/hot pads that match the towels. I have had mine forever!
– Soy candles. We found that these don't bother Chuck's allergies!

– Any scarves! I love them all!
– Sweaters I can wear that open in the front or have a tie… Seeing as I will be huge through winter, this seems like a good idea. But I want things I can wear after baby, too!

Lemon Herb Chicken Ring

The first thing I have to say about this recipe is YUM! I went to a Pampered Chef party and we were shown how to make this recipe. It was really simple to make and it tasted so good! I have made it before as a meal for Chuck and I. The only thing I did differently is use only one package of crescent rolls. I made the inside mix the same way and stuffed it slightly more than I normally would. It ends up being slightly more full and makes a good meal. I thought it was a little silly to use two packages of crescent rolls for the two of us. I have also made this as an appetizer, so keep that in mind if you are having friends or guests over.

Stuffed Chicken with Three Bell Peppers

There's a great website with healthy foods on it called FoodFit.com. I found a really yummy recipe on there that isn't too hard to make. It's Stuffed Chicken Breasts with Three Bell Peppers and is very good. I was a little hesitant the first time I made it because there is balsamic vinegar in it, so I wasn't sure I would like the taste of it. Turns out, the vinegar it simmers in ends up really sweet. So with the sweet vinegar and the peppers inside, it really reminds me of a stir fry! It's quite tasty. Hope you give it a try.

Peppermint Bark

I wanted to try something new for the holidays. I have seen Peppermint Bark all over the place, but had never tried it. I found some recipes and made my own for Thanksgiving to try out. It was a hit! Everyone liked it. It was really easy to make and I will certainly make it again. Here's a picture of some of it. I'm kind of sad it's all gone! 🙂
