Three Cheese Ziti Marinara

I recently discovered there is a microwave in the building next to the one I have my classes in. There are also machines with hot chocolate and food to purchase and heat in the microwave. Yesterday I brought this meal to heat up and have for dinner.

This is much better than the usual not-eating-dinner-at-all that I have been doing on nights I have class. Or I bring a small snack and forget to eat it. Then by the time class is over I am starving and don't get to my car to get anything until an hour or more after that. So by then I just don't bother. But it really isn't the best decision.

It was quite tasty. Of course I love pasta, so I haven't really found many I don't like, but I know I will be trying some more of these meals. The other one I tried recently was pretty good, too. I have a couple more to try, but those are from Lean Cuisine.

Fire

I could really go for one of these right now!

They are my favorite Jolly Rancher flavor ever made!

Unfortunately, I don't have any. And haven't found a place in the skyway that sells them. Oh well. Maybe you can find some and eat them for me. Just don't tell me. I'll be jealous! 🙂

Jelly Belly

Our candy machine at work had some very tasty little morsels in it. My coworker got some of these!

These are soda pop flavored. And they really do taste just like their flavors. It's a little creepy really. 🙂

There are two other flavors that I have seen in there.

This sour collection (yum!).

And this smoothie flavor (also yum!).

If you find these around, I highly recommend giving them a try!

Salad

I'm not a salad person. I'm not really a person that eats many green things at all. I'll dapple in the celery and even canned peas, but that's about where it stops. When we went to Mexico, I was taught the phrase “Nada verde” – Nothing green…just in case I needed to use it!

But As my previous posts have talked about my desire for a change in my eating habits, I am trying to give salad a few more tries.

There's a big salad bar in my building. I went there last week with my coworker. This is what I got.

Seemed like a good idea. I added all sorts of things I knew I liked: carrots, olives, turkey, ham, bacon bits…I just didn't really like them together. My other big problem is I don't like dressing. At all. And I really don't like them on lettuce. But dressing seems to be the part that everyone likes so much. (That is just bizarre to me!)

I am going to give it another go today. I am going to get some soup to go with it, too. But I figure the more I try it, I am eventually going to like it. Or at least tolerate it as a healthier option for lunch than Ramen Noodles and Easy Mac!

I also decided yesterday to give up caffeine. I don't need it. I just think I do. So I decided to stop drinking it along with all these other changes I am making. Wow…I think I might be growing up!

The Sneaky Chef

It's time to make a diet change. I love pasta. I love carbs. There's no way around that. I like fruits, but vegetables are gross. But if I keep eating pasta all the time, I am going to end up diabetic and I will probably die of starvation.

So it's time to take some precautionary measures. Since I turn 29 in just a few weeks, my goal is to not be so addicted to carbs by the time I turn 30. I know this seems like a long time, but I also know that if this is going to stick, I need to take baby steps.

So I have done some reading on things you can do to eat low-carb (because lets be realistic, I am not cutting carbs out completely). I also came across some cookbooks I have added to my Wish List. They are by The Sneaky Chef. She has two books that are ways to put vegetables into kids foods without them knowing. I eat like a kid. This should work for me.

She has a third book for cooking for your picky husband. Apparently women aren't picky eaters. Or maybe they hide it behind their “picky” kids and husbands. But I thought this might have more adult meals. (Since my hubby needs to eat, too. He doesn't eat like a kid like I do!)

If you have any good recipes for low-carb meals or ways to sneak in more vegetables, I would love your recipes! If you know of some other cookbooks I should add to my wish list, those suggestions are welcomed, too!

Island Chicken

Last night I made Island Chicken.

This recipe is from Sandra Lee. I just love her and her food. I found the recipe online, but mine came from her “Cooking Made Light” cookbook.

I don't like hot pineapple, so I kept some uncooked for myself to eat. And I only had chicken tenders on hand, so I used those. And I made wild rice to go with it. It was so delicious! I also add a little more seasoning than the recipe says. I just sprinkle the seasoning on instead of measuring it out. (I do measure it out for the sauce.) I make mine on my grill pan. I definitely need to keep this in mind as a quick go to meal! Give it a try….you won't be disappointed!

Tuna Noodle Gratin

I was in the mood for tuna yesterday and saw this at the store on sale. It was actually pretty good. I think I might get a couple more meals from Smart Ones to try.

Cake Pops

There's a good chance these will be at some event I have. So if you were on the fence about attending, you should really come in hopes that I have these.

These are Cake Pops from Bakerella. I think she might be my new hero!

What I am going to say next, just might possibly be heresy to most. But I don't really like cake. I do, however, like making things other people like…and one of those things happen to be cake. 🙂

And when I saw this adorable idea I thought it would be a fun appetizer to have out. I might even make them without the sticks and they'll be just as cute! I'm so excited to give it a try!

Kabobs & salsa

Do your neighbors invite you over for dinner and cook kabobs? Ours do! Yum!

(And yes…they cooked them before they fed us!)

This was actually a couple weeks ago that this happened. And they have since come to our house for burgers and brought some yummy salsa with them. We ate the entire bag of chips before we even started grilling. It was delicious! 🙂

Speaking of salsa….a friend of mine wanted to see our house, so she stopped by and brought some homemade salsa with her. iI was so tasty. I ate tons of it that day and the next day I had it for dinner.

I think I need to learn how to make fresh salsa. Or just not be afraid to buy the ingredients that go into making it would be a good start!

Chili Ramen

I am seriously in love with this flavor of Ramen Noodles. I don't want to hear how they aren't nutritionally sound or blah blah blah. I love them and they are delicious! So there. 🙂 They are spicy, and pasta-y and just…yum. I have them for lunch now and again and sometimes even for dinner. If you aren't into spicy foods, I don't recommend these to you. But if you are….give them a try.

And thank you to my brother's girlfriend for telling me about this deliciousness!
