Chips & Queso

This is one of my favorite snacks! I love the Monterey Jack cheese. It reminds me of the queso from Panchero's. (Which, by the way, is way better than Chipotle, but that is for a different post!) I love the blue chips, too. I don't know that they taste different than any other chip, but I like the color (which I think is more purple than blue).

Now, these chips are from Target and are from their Archer Farms food. The thing I like about them is that they have a ziplock seal to close the bag after you open them. HELLO! Calling all manufacturers of ANYTHING in a bag! Start putting these in all of your bags! The chips last forever and stay crunchy. No matter how many fancy clips you put on them (and this includes Pampered Chef clips), nothing works better in my mind than this seal!

So there's my two cents on the chip bag situation. I go out of my way to buy chips only from Target now. And I know you are all there often enough and could pick up chips when you need them! We are all there often enough! So try them out and see what you think. You just might be raving about them on your site, too!

Let's Dish

Since Chuck and I have both started working and get home at 6ish, we decided to give Let's Dish a try. We went last weekend and made 4 meals (we split each meal into two meals, so we really made 8) and then you freeze them and thaw them when you want to have them. They are pretty handy and it was kind of fun to go and make the meals. You can have them prepare them for you or pick up their ready-made items in the store, but it was a good time.

We have only tried one of the meals so far, but it was pretty good and there were still leftovers. I know there are a number of other places like this out there that I think I might want to try depending on the meals they are offering at the time, but this was available last weekend. I don't think it costs much more than getting food at the grocery store. You might have to wait on other people preparing their food at Let's Dish, but it went really fast with two of us there and not many other people there.

Overall, it was a good experience and I think I will try it again…assuming we like the other meals we have in the freezer! 🙂

Simple Sweet 'N Sour Meatball Simmer

This was from the most recent Kraft Foods catalog I got in the mail. Chuck made it recently and said it was really easy. I really liked it. He used fresh peppers and onions instead of a frozen pack. He made some brown rice to go with and it was so good! I was reminded that I should do a post on it because I had the leftovers today for lunch! They were quite tasty. I think the only other thing Chuck said he would change would be to use sweet and sour sauce instead of the apricot jam. But I don't think he cares for apricot jam, which is why he would use something else. I will attach the recipe at the bottom. Enjoy!

On a side note…I am writing this during my lunch break because I have a tendency to sit at my desk during my lunch break and eat and work on things at the same time. So I was trying not to work on “work” while I was taking my break! 🙂

Campbell's Soup At Hand

Have you ever tried these? I am sitting at my desk at work and having the Chicken with Mini Noodles and it's quite good. And I was pleasntly surprised to see that this one was only 80 calories! What a bonus! I just thought I would share this in case you hadn't tried them. I am attaching a link to the Campbell's website with the various flavors of the soup. You can also check the nutrition info on them, too. What other things would you recommend for lunch at work?

Cow Tracks

Have you tried these? They have a few flavors, but I had the mint one. Chuck picked some of this up for me. It has tiny chocolate shaped cows filled with mint sitting on top of fudge covered mint ice cream. Oh my! It's so tasty! The ones he got were also in “singles” containers. So you can eat the whole container and not feel guilty! How smart of them! I found a link with the other flavors HERE. MMMM…Now I am thinking about ice cream….and little mint filled chocolate cows! 🙂

Chicken Tetrazzini

Tonight I made Chicken Tetrazzini. We stopped over at Chuck's mom's house the other day and she was making homemade chicken stock. (It smelled SO good in the house!) She also mentioned this meal that I hadn't made in ages. I knew I had to make it soon. I added a picture I took, but I don't think it made the meal look as yummy as it tasted. 🙂 I usually make it with egg noodles, but I didn't have any on hand. So I used spaghetti noodles which is what the recipe originally called for. You put Parmesan cheese on the top and it gives it a nice crunchy layer on the top. If you want the recipe let me know.

Wild Rice Soup

Last week Chuck and I went to a friends' house for dinner. She made Wild Rice Soup. I have really started to like this soup recently. We had it a couple days when we were out skiing in Vail. I made sure I was given the recipe and I can't wait to try it. I should have found out about this earlier…like when it was cold out. Not when it's starting to be in the 40s and 50s outside. Who wants to make soup to warm your insides then? I guess I'll have to hope for a rainy day or something. Those are days that you would want soup, right?

I hope to make it soon and I will post a picture and possibly the recipe then. Anyone have some really good recipes you think I should try? I am always looking for new foods to eat! (But keep in mind what a picky eater I am!) Meats, potatoes, pasta, rice….they are some of my staples! 🙂

Healthy Comfort Food

I while back, I came across some yummy (and healthy) recipes in one of my Fitness magazines. It was healthy comfort foods. We have had a couple of them. I think one of my favorites is the Spicy Chicken Pizza. It's not hard to make and is very yummy. And you don't have to feel guilty after you eat it!

Another one we tried was the Macaroni & Cheese. I was pleasantly surprised. It was quite good. You use a lot of milk and a bit less cheese. But I still remember it was quite good.

The following are the other recipes that were in this article. I have not tried the others, but if you do, please let me know how they turn out.

Red Apple Sangria

I haven't made this yet, but after the smashing results from the last one, I have to give this one a try! This one is also from Applebee's. Somehow I looked it over after I read the White Peach Sangria. Yum!

Red Apple Sangria

3oz Cabernet Sauvignon
1oz Sour Mix
1oz Apple Juice
1oz Pineapple Juice
1oz Cranberry Juice (optional or as substitute for apple juice)

Add lime wedges, orange slices, apple balls – the more fruit the better it tastes.

White Peach Sangria

I saw this on the menu at Applebee's and wrote down what was in it. I came across a recipe for it online and I thought I would share. I made some the other night to try it out and it's *SO* very yummy! I'll be making some of this tomorrow for my Bag Daddy Party I am having! Enjoy!

White Peach Sangria
3 oz Sutter Home White Zin
1 1/4 oz Peach Schnapps
2 oz Pineapple juice
splash of Sierra Mist

Fruit to add: sweet red apple, orange slice, lime wedge

*Note* this was from someone's post that said it came from an Applebee's bartender. I know what I'm getting the next time I go there.
