chicken enchiladas monterey

I recently tried this meal from WW Smart Ones. It was all right. It had more calories than most of the others I eat at 330 calories. This sauce tasted like a very mild taco sauce. It wasn't bad, but I prefer a little spicier than that.

If I am in the mood for enchiladas, I think I will stick to the chicken enchiladas suiza meal. It is spicier and has 290 calories.

I was so excited about the snowman cookie. Since I am tab obsessed with snowmen.

crazy candles

A while back we had a birthday celebration for Chuck's sister. She requested a DQ cake. These are my favorite, too. Can you see that there are tiny leaf shaped candies on the cake?! So cute!

Chuck and I were out running errands and he made an impulse purchase (something he never does). They were these colorful candles.

The best part about them is what they do when you light them….their flames are the same color as the candles. They are the coolest thing we have ever seen!

If you happen to be near a Bed Bath & Beyond you should swing in and see if you can find some of these for your next birthday celebration.

corn & bean salsa

This is a terrible picture because I had already eaten most of this, but crappy picture or not…this was SO delicious. We had this at a friends' house recently and I was shocked at how simple it was to make. You should make it immediately and try not to eat it all!

Corn & Bean Salsa

  • Can of corn
  • Can of black beans
  • One small tomato
  • Cilantro to taste
  1. Put all of the ingredients into a bowl.
  2. Chill before serving with tortilla chips…or a spoon!

lasagna bake with meat sauce

This was the Lasagna Bake with Meat Sauce from WW Smart Ones. The taste was good, but there wasn't much sauce. So it was a little dry…even for my liking. I would probably eat it again, but there are many other meals I like better, so it would probably only be in a pinch.

I much prefer the Ziti over this.

But I am proud of myself for trying new things. Trying this many different meals is a big feat for me. So yay!

brownies

A while back, my wonderful neighbor friends had us over for dessert after we went out to dinner. She made some fabulous brownies.

This is my neighbor friend, Kelly when we were out to dinner.

She baked these tasty brownies.

Then she made this cream cheese/peanut butter topping.

Then she topped it with frozen, crushed Twix bars.

She left a few plain ones in case we didn't like the topping. You should give this a try! You won't be disappointed!

alfredo pasta with chicken & broccoli

I tried the Alfredo from Lean Cuisine and I wasn't impressed. It just didn't taste very good. I can't tell you what exactly it was that I didn't like. I just know I won't get it again. The chicken wasn't all that great and the sauce wasn't very good. Eh…it was worth a try. 🙂

I am learning that I don't like the Lean Cuisine meals as much as I like the Weight Watchers Smart Ones. Live and learn I suppose.

cookie cake

While perusing through some blogs, I came across this adorable idea from Williams-Sonoma.

I think I need to add this to my wish list because it looks like so much fun to make! Who wouldn't love this humongous oreo-looking cake to appear in front of you on a table?!

I love that there is peppermint candy in it! Maybe I'll get one and make it for Christmas.

I'll leave you to drool over this now.

pomegranate…the devil fruit

It turns out that pomegranates are in season right now. I have found that I love things that are pomegranate flavored and thought I would give this tasty fruit a try.

So I researched the crap out of them online. How you eat them. What part you eat. All the things I didn't know about them.

I bought a pomegranate and thought it seemed like a fun adventure for a Friday night. Man was I wrong. Here's what I did after following instructions I found online.

1. Here is my pomegranate.

2. You cut off the crown.

3. Then you score the skin in various places without cutting through the seeds.

4. Next, place it in the water with the cut end facing down for about 10 minutes. (I had started the next step and realized I hadn't taken a picture of this step.)

5. Now you pull it apart and pull out the seeds. I guess the water loosens the membrane around the seeds so they come out more easily.

6. As you pull the seeds out of the pomegranate, the seeds will sink and the membrane will float.

7. After you have released all the seeds, take out any of the membrane floating on the top. Then strain the water out and you are left with the pomegranate seeds.

I read that you can eat the whole seed. There's a tiny seed in the middle which is surrounded by the juice and a thin layer holding it all in. You can also put the whole thing in your mouth, pop the thin layer and release the juice and then discard the seed. This was the option I chose. I did not care for the seed. But the seed is what holds the most health benefits.

Also, a whole pomegranate has around 105 calories. I think I managed to eat about 2 calories.

Now why might I call this the devil fruit? Because this whole process took FOREVER. A pomegranate has hundreds of those little seeds inside and you need to pull them all out. Then they are tiny, so you need to eat them one (or a few at a time) if you eat them the way I did. And you just get a TINY bit of juice out of each one. They were tasty, but so annoyingly frustrating.

So I would not get one of these again. They just weren't worth it. If you want to give it a try, feel free, but don't say I didn't warn you.

Now I know why pomegranate juice is so expensive!
